Scallion Pancakes

These are not your traditional pancakes. They are better. In a much less maple syrup-y kind of way.

Dave and I beg, I say BEG, his aunt to make these for us whenever we are within an hour’s drive of her house. Last night, our dreams came true.

She taught us how to make them.

We’ve been trying to get a recipe out of her for years, but she always says that there is no recipe. She said she would have to show us. So last night, she did. And all was well with the world. I even got to make the very last one all by myself.

We didn’t have our camera with us (oh, the shame) but we did take a few low quality pictures on my phone. Look for a scallion pancake tutorial here on HuYoung Heaven after the New Year.

South Beach Pancakes

Hmmm, looks like we’re having pancakes about once a week around here. Can’t be mad at that.

We don’t really do the South Beach diet, but we do try to limit our sugar and carb intake. The ingredients for these pancakes sound kind of weird, but they turn out delicious. Trust me.

  • 1 Cup Oatmeal
  • 1/2 Cup Cottage Cheese
  • 4 Eggs (original recipe calls for 8 egg whites, but I can’t be bothered to separate that many eggs)
  • 1 tsp. Vanilla
  • 1 tsp Cinnamon (optional)

You need to use a blender or food processor to mix this all together. It munches up the oatmeal and makes a nice batter.  Serves 2.

Dave used a little bacon grease on the pan this time. We are nothing if not healthy around here.

According to southbeachdietinformation.com these pancakes have 28 grams of protein per serving. Sweet mercy, who knew pancakes could be so healthy?
