Soup soup soup. Nice and cheap. Well, it can be.  This one is.

Chicken Tortilla Soup


I hope you’re comfortable cooking a whole chicken. If you’re not, you should be! The chicken I cooked cost $4 and gave me enough meat and broth for this soup, with 2 cups of meat and 2 cups of broth left over.

Throw a whole chicken in a large pot and cover it with water. Add salt, seasonings, veggies if you want.  Simmer this on the stove for about 2 hours (longer if you want). Pull the meat off the chicken and strain the broth. Now you’re ready to make soup!

Let me break it down for you

  • 2 cups cooked chicken ($2)
  • 4-6 cups chicken broth  (free when you make your own)
  • 1 14 oz can hominy ($.59)
  • 1 14 oz can diced tomatoes with jalepeno peppers ($.59)
  • 2 cups cooked black beans ($.50 when you cook your own)
  • spices (salt, chili powder, adobo) ($ negligible)

Grand total:  $3.68

We haven’t eaten all of  it yet, but I’m guessing this made 6 servings of soup. That makes it $.61 a serving! 61 cents!

Serve with cheese and tortilla chips.

    what about the tort chips? probably cost more than the soup! you can make your own torts,then fry into chips! why does everything have to be the hard way to be cheap?
